Karen would like to learn strategies for healthful eating as well as other health-promoting behaviors. She recently completed a 24-hour dietary recall to give herself a snapshot of her nutrient intake:
Breakfast = 2 scrambled eggs with 2 ounces of cheddar cheese, 2 pieces of toast with 1/2 tablespoon of butter on each piece and one tablespoon of grape jelly on each piece of toast and one cup of coffee with 1 tablespoon of sugar.

Lunch = One Big Mac sandwich from McDonald’s with a medium-sized serving of french fries and 24 ounces of a fountain soft drink.

Dinner = 2 cups of spaghetti with marinara sauce, 1/4 cup parmesan cheese, 1/2 cup of lettuce with 2 tablespoons of croutons and 1 ounce of Caesar Dressing, 6 ounces of red wine.

Karen does not engage in planned physical activity. Additionally, Karen smokes cigarettes “socially” when she is out with friends at a local bar (once or twice each week). Karen’s family has an extensive history of obesity, cancer, respiratory disease, and heart disease.

What four factors may be influencing Karen’s dietary choices (for instance advertising) and provide a rationale for each factor you choose.

Identify the 6 categories of essential nutrients. Which one of the macronutrients is in oversupply in Karen’s diet (there may be more than one)? Discuss the concept of nutrient density. Use one of Karen’s foods and then propose a healthy alternative that has the same number of calories but contaicozns more fiber, vitamins, or minerals.
